  Benzoic acid can be used as a preservative in food, feed, latex, and toothpaste. Under acidic conditions, it has an inhibitory effect on mold, yeast and bacteria, but has a weaker effect on acid-producing bacteria. The antibacterial activity of the molecular state of benzoic acid is higher than that of the ionic state, so when the pH is less than 4, the antibacterial activity is high, and the suitable pH value for antibacterial is 2.5-4.0, generally lower than the pH value of 4.5-5.0. Due to the low solubility of benzoic acid in water, it is actually added to food after adding an appropriate amount of sodium carbonate or sodium bicarbonate and dissolving it in hot water above 90°C to convert it into sodium sodium benzoate. If benzoic acid must be used, it can be dissolved with an appropriate amount of ethanol before application. Because the solubility of benzoic acid to water is lower than that of sodium benzoate, when sodium benzoate is used in acidic foods, care should be taken to prevent precipitation and reduce its use effect due to the transformation of sodium benzoate into benzoic acid. Benzoic acid can be used together with para-hydroxybenzoic acid esters in soy sauce and refreshing drinks to enhance the effect.

It can also be used in food flavors such as chocolate, lemon, orange, berries, nuts, and candied fruit. It is also commonly used in tobacco flavors. Due to the low solubility of benzoic acid, it must be fully stirred when used, or dissolved in a small amount of hot water or ethanol. When used in concentrated fruit juice for refreshing drinks, because benzoic acid is easy to volatilize with water vapor, its sodium salt is often used.
